A particularly simple taste treat for breakfast....scramble eggs with chives and salt. Pour into pan on medium heat and move around gently. If you do this you will have nice moist perfectly scrambled eggs. Remove from heat and stir in ricotta keeping the ricotta in recognizable chunks. Now divide over toasts and decorate with whole chives. That's it!
DON'T STIR EGGS WHEN SCRAMBLING...gently move them to and fro to make large moist curds.
