Shrimp and Grits

Ingredients
  • 6 cups water
  • 1 1/2 cups grits
  • 1/2 stick butter
  • 3 1/2 cups sharp grated cheddar
  • 1 1/2 pounds shrimp
  • 9 slices bacon
  • 3 tablespoons chopped parsley
  • 6 teaspoons lemon juice
  • 1 can rotel
  • 1 cup scallions
  • 4 cloves garlic chopped
Directions
Bring water to boil. Add salt and pepper. Add grits and cook until smooth and water is absorbed. I go for about 40 minutes and add more water if necessary. Remove from heat and add butter and cheese. Fry bacon in large skilled until crisp. Remove bacon from skillet and drain. With bacon grease remaining in skillet, cook shrimp until pink. Add lemon juice, parsley, scallions, garlic and rotel. Saute 3 minutes. Spoon grits into large serving bowl. Add shrimp mixture on top and sprinkle with crumbled bacon. Serve immediately.
