Chicken Marbella
- 2 chickens in pieces
- 8 cloves of garlic chopped
- 1/4 cup dried oregano
- salt and pepper
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1/2 cup prunes
- 1/4 cup Spanish green olives
- 1/4 cup capers and juice
- 6 bay leaves
- 1/2cup white wine
- 1/2 cup brown sugar
Marinate chicken in zip lock bag over night with everything EXCEPT brown sugar and wine. Preheat oven to 350 degress. Place chicken in a Pyrex or 2. It does better if pieces are not on top of each other. Sprinkle with sugar, then wine and bake for 1 hour. This is great for a party as you can let it sit at room temperature. THIS IS GUARANTEED. I have been making this for 25 years.
