key lime pie
- 1 15 oz. Eagle Brand milk
- 1/2 cup key lime juice
- 2 egg yolks
- 1 1/3 cups graham cracker crumbs
- 1/4 cup butter melted
- 1/4 cup sugar
Mix crumbs, sugar and butter and press into 9 inch pie shell. Bake for approximately 10 minutes. Let cool.
For the filling, blend juice, condensed milk and egg yolks and pour into pie shell. Beat two egg whites to a stiff peak and add 1/4 cup sugar.
Top with meringue and bake until meringue is a soft beige. Do not burn tips. Let cool completely before serving. This is just as good with a whipped topping instead of meringue.
