Potato pie
- 3 cups frozen hash browns
- 1 can Rotel drained
- 1 cup grated cheddar
- 1/3 cup chopped green onion
- 6 eggs
- 1 cup chopped cooked ham
- 1 1/2 cups milk
- 1/2 tsp salt
I prefer to prepare this in large ramekins. I spray with PAM and place defrosted potatoes on the bottom. Then layer my Rotel, ham, onion and cheese. I mix the salt and pepper with the egg and milk and pour batter over mixture in remekin. I bake at 350 degrees for 40 minutes uncovered. Do not let top burn but must make sure it is set. Then let stand for 10 minutes. Scoop out of ramedins to serve. Sometimes I have black beans and sliced avocado on the side
